Instructions

  1. 1 45 mins before grinding, put meat in freezer to chill. Chilling yields a nice pebbly grind.
  2. 2 While meat is chilling, measure all spices and liquids. Combine everything but the milk powder.
  3. 3 Grind meat once through coarse plate.
  4. 4 After grinding, check temperature of meat. If it's above 40Β°F, refrigerate 30–45 minutes before mixing.
  5. 5 Mix spice paste into meat with gloved hands for 2–3 minutes, until evenly distributed.
  6. 6 Add milk powder and mix until tacky β€” the meat should cling to your hand and feel elastic (5–10 mins under 5 lbs).
  7. 7 Store the mixture in the fridge overnight for flavors to develop.
  8. 8 Use as you would any sausage. Keeps 1 week in fridge or up to 6 months frozen.
